Lemon Tahini Couscous with Chicken
Ingredients
- 1 cup whole pearl couscous
- 1/4 cup tahini
- 1/4 cup water
- 2 tsp lemon zest
- 2 tbsp lemon juice
- 2 tbsp olive oil, divided
- 1/2 tsp salt
- 1/4 tsp ground pepper
- 1/4 tsp red pepper
- 1 clove minced garlic
- 2 cups sliced mushrooms
- 1/2 cup chopped red bell pepper
- 4 cups cole slaw mix
- 4 cups baby spinach
- 12 oz chicken breast
- 1/4 cup toasted almonds
- 1/4 cup feta cheese
- 1 tbsp chopped parsley
- Lemon wedges (for serving)
Instructions
- Cook couscous according to package instructions.
- In a bowl, whisk tahini, water, lemon juice, 1 tbsp olive oil, salt, ground pepper, and red pepper. Set aside.
- Heat remaining olive oil in a skillet. Add garlic, mushrooms, and bell pepper; cook for 3 minutes.
- Stir in cole slaw mix and spinach; cook for 2 more minutes. Add chicken, couscous, and tahini sauce; cook for 2–4 minutes.
- Sprinkle with almonds, feta, parsley, and lemon zest. Serve with lemon wedges.
