Lemon Tahini Couscous with Chicken

  1. Cook couscous according to package instructions.
  2. In a bowl, whisk tahini, water, lemon juice, 1 tbsp olive oil, salt, ground pepper, and red pepper. Set aside.
  3. Heat remaining olive oil in a skillet. Add garlic, mushrooms, and bell pepper; cook for 3 minutes.
  4. Stir in cole slaw mix and spinach; cook for 2 more minutes. Add chicken, couscous, and tahini sauce; cook for 2–4 minutes.
  5. Sprinkle with almonds, feta, parsley, and lemon zest. Serve with lemon wedges.
