Red Lentil Soup
Ingredients
- Olive oil
- 1 large yellow onion, chopped
- 2 minced garlic cloves
- 1 tbsp tomato paste
- 1 tsp cumin (6 g)
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
- Cayenne powder (to taste)
- 1 qt chicken or vegetable broth
- 1 cup red lentils
- 1 large carrot
- Juice of 1/2 lemon
- 3 tbsp chopped cilantro
Instructions
- In a large pot, heat olive oil. Add onion and garlic and cook until golden, about 4 minutes.
- Stir in tomato paste, cumin, salt, pepper, and cayenne. Sauté for 2 minutes.
- Add broth, 2 cups water, lentils, and carrot. Simmer until lentils are soft, about 30 minutes. Salt to taste.
- Purée half the soup, then add it back into the pot.
- Stir in lemon juice and cilantro. Serve drizzled with olive oil and dusted with chili powder.
