Red Lentil Soup

  1. In a large pot, heat olive oil. Add onion and garlic and cook until golden, about 4 minutes.
  2. Stir in tomato paste, cumin, salt, pepper, and cayenne. Sauté for 2 minutes.
  3. Add broth, 2 cups water, lentils, and carrot. Simmer until lentils are soft, about 30 minutes. Salt to taste.
  4. Purée half the soup, then add it back into the pot.
  5. Stir in lemon juice and cilantro. Serve drizzled with olive oil and dusted with chili powder.
