  1. If using meat, marinate sliced stew meat in mayonnaise, lime zest, lime juice, chili powder, garlic powder, cumin, and salt.
  2. Place a block of cheese inside each pepper.
  3. Char peppers over a stove flame, cast iron skillet, or grill.
  4. Chop charred peppers (and meat, if using) and add to a pan.
  5. Portion mixture into tortillas.
  6. Serve with sour cream and hot sauce.
