Poblano con Queso Tacos
Ingredients
- Poblanos (or Anaheim)
- Mexican Manchego (or Monterey Jack) cheese
- Corn tortillas
- USDA stew meat (optional), sliced
Marinade: mayonnaise, lime zest, lime juice, chili powder, garlic powder, cumin, salt
Instructions
- If using meat, marinate sliced stew meat in mayonnaise, lime zest, lime juice, chili powder, garlic powder, cumin, and salt.
- Place a block of cheese inside each pepper.
- Char peppers over a stove flame, cast iron skillet, or grill.
- Chop charred peppers (and meat, if using) and add to a pan.
- Portion mixture into tortillas.
- Serve with sour cream and hot sauce.
